Orange Olive Oil Bread

Ingredients:

Dry Mixture:

  • 1.25 cup flour
  • 1 tsp b.p.
  • 1/2 tsp baking soda
  • pinch salt

Wet Mixture:

  • 2 eggs
  • 1/3 cup olive oil
  • 1/2 cup sugar
  • zest and juice of 1 orange
  • 1 tsp vanilla
  • bit of oj if too thick
Preparation: 
  1. Mix wet by whisking vigorously.
  2. Mix dry separately then combine with wet.
  3. Put into floured bread pan or cake pan.
  4. Bake at 350 F until golden brown (20 – 30 minutes)
